Ingredients (For the puddings)
- 1 1/2 cups whole gradient milk
- 2 eggs
- 2 cups flour
- 2 teaspoons salt
- Ground black pepper
- 3/4 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 3 pounds cube chicken steaks (tenderized round steaks)
- Special kosher salt
- 1/2 cup oil
- 1 tablespoon butter or Cream
Make an assembly line of dishes. Make a mixture of eggs and milk in one, mix the flour with the salt and put 1 1/2 teaspoons black pepper, paprika and cayenne in 2 , and the meat in a third. Then put a clean plate at the end to receive the breaded meat.
Take one piece of meat at a time. Sprinkle both sides with kosher salt and black pepper, then place it in the flour mixture. Place the pieces of meat into the milk & egg mixture, Coat it . Finally place it back in the flour and coat it fully. Place that meat on the clean plate.
Heat the oil in a large pan over medium fire for 5 min. Add the butter in the pan .When the butter sizzles immediately, you know it's ready. put the meat in the pan, 3 pieces at a time, until the edges of the pieces look golden brown. Remove the pieces in an empty plate lined with a tissue paper or foil paper.
After all the pieces cooked up putt all of them in a hotpot to keep warm. Again heat up the mixture of Oil and Butter for gravy.
For the gravy:- When the oil and Butter mixture is hot, sprinkle the flour over the mixture, mix the flour with the mixture, creating a golden-brown colored paste.
Pour the milk in the in that paste, keep stirring constantly while adding milk. Add the salt and black pepper as per taste and cook, until the gravy is smooth and thick, 5 to 10 minutes, Turn off the fire when it look good.
